Hidden Heart Cake /  Surprise Cake

Ingredients for Red Cake:

All purpose flour - 2 cups
Icing sugar - 1 1/4 cup
Baking powder - 1 tsp
Egg - 4 large
Butter,room temperature - 1 cup
Vanilla extract - 2 tsp
Salt - 3/4 tsp
Red food color

Ingredients for Chocolate Cake:

All purpose flour - 1 1/2 cups
Cocoa Powder, unsweetened - 1/2 cup
Icing sugar - 1 1/2 cup
Baking powder - 1 tsp
Eggs - 4 large
Butter, room temperature - 1 cup
Vanilla extract - 2 tsp
Salt - 3/4 tsp

Things Required

Large Mixing bowl
Electric hand mixer
2 Loaf pan (9x5x3 inch pan)
Spatula
Heart shape cookie cutter

How to make Red cake:



  1. Preheat Oven to 180 C.
  2. Grease the baking pan with some butter
  3. In large mixing bowl, take sugar and butter. Beat it with hand mixer until smooth and fluffy
  4. Add vanilla essence, 2 eggs at a time and beat again. Scrape the sides of bowl and add 2 more eggs and beat it again.
  5. Now shift all the dry ingredients to the creamy batter.
  6. Mix all well without any lump formation.
  7. Add food color ,mix it until you get the uniform color. Add more drops until you get the desired color.
  8. Transfer the batter to prepared pan and bake it for 50 mins or Insert toothpick on the center of the cake, it should comes out clean.
  9. Once it baked, carefully remove it from oven. Let it sit for 15 mins.
  10. Then remove the cake to cooling rack and let it completely cooled down.
  11. Once it cooled down, cling wrap it and keep it in refrigerator until usage.


How to make Chocolate cake batter:



  1. Grease the baking pan with some butter and set aside.
  2. In large mixing bowl, take sugar and butter. Beat it with hand mixer until smooth and fluffy
  3. Add vanilla essence, 2 eggs at a time and beat again. Scrape the sides of bowl and add 2 more eggs and beat it again.
  4. Now shift all the dry ingredients to the creamy batter. Mix all well without any lump formation.

How to make Hidden Heart Cake:


  1. Take out the red cake from fridge and slice it up evenly.
  2. Take a heart shape cookie cutter and cut out a heart shape in every slice of cake. Keep the heart aside. (you can make cake pops with leftover cake)
  3. Now add 1/4 th of the greased pan with chocolate batter and gently tap on the counter to spread evenly.
  4. Arrange the hearts next to each other in the center of the loaf pan. Make sure there is no gap in between 2 hearts. pack them closely.
  5. Leave some space around the packed hearts, so that we can fill that space with chocolate batter and it hide the hearts.
  6. Now add the remaining chocolate batter to the sides of the pan and gently tap it on counter, so that batter flow through all around the hearts. Don't tap it hard, the hearts will get misplaced.
  7. Bake it for 50 mins or Insert toothpick on the center of the cake, it should comes out clean.
  8. Once it baked, cool in the pan for 15 minutes and then remove it to cooling rack.
Hidden cake is ready!

Mixed Berry Lassi |  Mixed Berry Yogurt Smoothie

Lassi is my favorite summer drink. It is a popular, traditional, yogurt-based drink from the Indian Subcontinent and originates from the Punjab. It is a blend of yogurt, water, spices and sometimes, fruit. There are varieties of savory and sweet lassis. In Canada, Mango lassi is a popular drink consisting of sweetened mango pulp mixed with yogurt, cream or ice cream. It is served  in a tall glass in straw and topped with some crushed nuts. Today i am gonna share fruit lassi, which is made of mixed berries, yogurt, milk  and sugar. These are enjoyed chilled as a hot-weather refreshment. You can store it in refrigerator for 1 or 2 days.

Mixed Berry Lassi |  Mixed Berry Yogurt Smoothie

Ingredients:

1/2 cup Strawberry
1/2 cup Blueberry
1/2 cup Raspberry
1 cup Thick Yogurt
1.5 cup Milk/water
1/2 cup Ice cubes
5 to 6 tbsp Sugar or add as per your taste
A pinch of salt
Some berries for garnishing

Method:

Take all the ingredients in blender (except garnishing berries).
Blend them into smooth.
Pour into serving glass, garnish and Serve chill!

Pomfret Fish Fry | Vavval Meen Varuval

Pomfret Fish Fry

Ingredients

6 to 8 fish pieces
1 tsp turmeric powder for washing fish
Oil for shallow frying

For marination

1 tbsp chilli powder
2 tbsp coriander powder
1 tsp fennel powder
4 large garlic bulb, crushed
1 tbsp lemon juice
1 tsp salt

Method

Pomfret Fish Fry

Take fish pieces in a large bowl, add turmeric powder and mix well. Let it sit for 5 mins and then wash fish thoroughly with fresh running tap water.  Washing fishes with turmeric eliminates the odor of fish smell.
Pat dry the fish pieces with paper towel and set aside.

Add all the ingredients mention under marination column in a bowl or deep dish. Add some water and mix all together. The paste consistency should be thick. So please keep an eye on it while adding water.

Apply masala on all sides of fish pieces and marinade for half an hour in refrigerator.

Heat pan/tawa on medium heat. Add oil on it for shallow frying.

Place 3 to 4 pieces of fish on the heated oil and fry it for sometime. Turn them to other side and fry again. Fry until it cooked well.

Drain the excess oil in paper towel.

Serve hot with lemon wedges, sliced onions. Enjoy!!

Broccoli Rice - Lunch Box Recipe

Broccoli Rice is a simple dish, which you can make it under 10 minutes. I make this dish often for my 17 months old son. He loves to have it with scrambled egg. It cooks and is ready in a flash, perfect for lunch box dish. Try this out, let me know your feedback.

Ingredients:


2 tbsp oil

1 tsp cumin seeds
1 tbsp garlic, finely chopped
1/2 cup onion, finely chopped
1 cup broccoli, finely chopped
2 cup cooked rice
1/2 tsp ground pepper
Salt as required

Heat oil in pan over medium flame.

Add cumin and garlic, saute for a minute.

Add onion, saute till it turns to light pink color

Add broccoli and season with salt and pepper. Mix all well and cook for 5 minutes by stirring occasionally.

Add cooked rice and mix well, check seasoning and add if required.

Stir occasionally, cook uncovered for 3 minutes and then turn off the heat.

Chicken Flower Dumplings

Chicken Flower Dumplings

These Chicken Flower Dumplings are made using minced chicken meat, which is coated with generous amount of rice and then steamed it. Simple isn't it!?  You can make it  under 30 minutes (excluded rice soaking time) . Try this out and let me know how it turned out for you.

Step 1: Ingredients


Chicken Flower Dumplings

1 lb Minced chicken
1/2 cup long grain rice (Basmathi rice) , wash and soak it in water for about an hour
1 tbsp ginger, finely chopped
1 tbsp garlic, finely chopped
1 tsp soy sauce
1 green chilli, chopped
1/2 tsp chilli powder
1/2 tsp garam masala
1 tbsp cilantro, chopped
salt as required

Step 2: How to Make Spicy Chicken Balls

Take minced chicken in a bowl, add soy sauce, ginger, garlic, chilli, cilantro, red chilli powder, garam masala, salt.

Combine altogether.

Grease your palm with little oil (do not apply too much oil, then rice wont coat on it).

Take a small portion from minced chicken mixture and roll it to a ball.

Repeat the same for rest of the minced chicken.

Step 3: Coat With Rice

Once it soaked for an hour, drain water and keep it on a plate.

Roll the minced chicken balls on rice, just make sure it is coated well.

Step 4: Steam the Chicken Balls

Steam the rice balls for 10 to 15 minutes on medium flame.

Step 5: Plate It!

I kept some curry leaves (you can use any greens) on plate and then arranged chicken dumplings like flower bouquet.

I've used hot sauce for bow.

Vegan Orange Cake

It is one of the simplest and flavorful cake. I am sure you wont stop with a piece of cake ;) . It just vanished in 10 mins at my home. My daughter loved it and asked me to make again tomo. :)

Orange Cake

Step 1: Ingredients


Ingredients for Orange Cake:

All purpose flour - 1 1/2 cup
Orange juice - 1 1/4 cup
Orange zest - 1 tbsp
Baking soda - 1 tsp
Baking powder - 1/4 tsp
Sugar - 1/2 cup
Salt - 1/8 tsp
Canola oil - 1/3 cup
lemon juice - 1 tbsp
Vanilla extract - 1 tsp

Ingredients for Orange Icing:

Icing sugar - 1 cup
Orange juice - 1/4 cup
Orange zest - 1 tsp

For baking:

9 inch springform Pan

Step 2: prepare the baking pan

Orange Cake

Grease the pan with butter and add some all purpose flour in it. Swirl the pan to flour coat the bottom and sides of the pan.

Step 3: Making of Orange cake

preheat oven to 375 in bake mode.

Take all the dry ingredients in a large mixing bowl. whisk until all incorporated.

In a separate bowl, take all the wet ingredients, zest of Orange and mix all well. 

Now add wet mixture into the dry mixture. Mix all together without lumps.

Now pour the cake batter into the prepared cake pan. Tap on the counter top, to release the air bubbles.

Bake the cake for about 20 to 25 mins. Check the cake after 20 mins of baking. Insert a toothpick in the centre of cake and it should comes out clean. If it's sticky in the toothpick, bake for 2 to 3 more mins.

Once it baked, remove carefully from the oven and let it cool down for sometime.

Step 4: Making of Orange Icing

Take a cup of icing sugar in a bowl, add a tbsp of Orange juice at a time. Mix and check for the right icing pouring consistency.

Add orange zest to it and mix well.

Orange Icing is ready! It is soooo yumm!!

Step 5: Icing the cake

Once the cake is completely cooled down, take out the cake from cake pan and place it in cake stand/plate. [ I inverted the cake for smooth flat base]

Pour the icing in middle of the cake and use butter knife or back side of knife to spread the icing all over the cake. I left the sides of cake as it is. [you can apply icing if you need]

Decorate the cake with sliced oranges and orange zest.

Before you cut the cake, make sure the icing sets well. Happy Baking :)

Butter Murukku Recipe


Butter Murukku is a traditional Indian snack made during festival time. Butter Murukku is made with rice flour, besan flour and gram flour.  It is easy to make, crispy and melt in mouth texture. There are wide varieties of Murukku recipes with different flour proportion. I have posted 2 varieties in my website. Click on the link to check

Ingredients

Rice flour 1 cup
Gram flour 1 tbsp
Besan flour 2 tbsp
Water 1 cup
Sesame seeds 1 tbsp
Asafoetida 1/8 tsp
Butter 3 tbsp
Salt to taste
Oil for deep frying

Method


Take water in a pot and bring it to boil. Add in butter, salt and mix until it dissolved.

Add all flours into the boiling water , immediately remove the pot from flame and mix it all without lump using spatula. Knead well and the texture of the dough should be in thick. Add some rice flour if it's still sticky.

Keep the dough covered and let it cool down for sometime.
Once it is warm enough to handle, add in asafoetida, sesame seeds and knead all together.

Now divide the dough into 6 to 7 equal portion. Take a portion, place it in piping mold. I used star tip for making this murukku.  You can directly press it into the heated oil. But with the piping mold it's pretty hard to press. So I just pressed it in plate and transfered for frying.



Head oil in a pan for deep frying over medium high flame. Test oil with a pinch of dough, if it is rise up immediately, then the oil is ready for frying.

Gently drop the piped dough into heated oil. Fry them batchwise on both sides until it turns to golden brown color.

Remove excess oil in paper towel.

Note:

Don't forget to cover the dough to avoid from drying.
Since I dont have murukku press, I have used piping with star tip.
Fry it in heated oil, else it will absorb more oil and Murukku will become soggy.
Store it in air tight container.
