Ingredients:
- 2 cups of basmathi rice
- 2 bay leaves
- 2 cloves
- 2 small size cinnamon sticks
- 1 star anise
- 3 onion ( 1 sliced and 2 chopped)
- 2 chopped tomato
- 1 cup of frozen vegetables ( carrot,peas,beans)
- 1 cup of chopped cauliflower
- 5 slited green chillies
- 1 tbsp of chilli powder
- 1 tbsp of ginger garlic paste
- 2 tbsp of chopped cilantro
- 1/2 tbsp of garam masala
- 1/2 tbsp of lemon juice
- 2 tbsp of ghee
- oil
Method:
- Wash and Soak basmathi in water for 20 minutes.
- Wash all the vegetables and keep it aside.
- Heat oil in pan for deep frying, add sliced onion fry untill it turns golden brown colour and set aside.
- Heat 2 tbsp of oil in pressure cooker add bay leaves,cloves, cinnamon and star anise. then add chopped onion, saute till it transparent
- Add ginger garlic paste,saute for few minutes then add tomato, cook until soft.
- Add vegetables, chilli powder, garam masala and salt, close the cooker with plate and cook until the vegetables cooked well.
- Add 3 cups of water, cilantro and lemon juice. Check for the salt taste after adding the water.
- Increase the flame and wait till the water boils. Add rice, ghee and close the cooker with its lid.
- When the steam starts to arise, put the weight on the lid and wait for 1 whistles and then turn off the flame.
- Keep the pressure cooker aside for some minutes until all the steam settles down
- Finally garnish it with fried onions and Serve hot with Raita or any gravy.
